Chili Bison Burger

Serves 3

Cooking time: 35 minutes

Ingredients

¼-cup red onion (thinly sliced)

1 pound ground bison meat

2 (4-ounce cans) diced green chilies

½-cup pepper Jack cheese (shredded)

¼-teaspoon salt

¼-teaspoon freshly ground pepper

4 whole-wheat hamburger buns (toasted)

1 cup romaine lettuce (very thinly sliced)

Direction

Preheat a grill over medium heat.

Take a small bowl and place the onion in it and cover it with cold water.

Take a separate medium bowl and add the bison meat, drained green chilies, ¼ cheese, salt and pepper. Gently combine. Refrain from over mixing.

Form 4 patties of about ¾ inches thick.

Grill the burgers, turning them once.

Top each burger with the remaining green chilies.

Sprinkle the remaining ¼ cheese. Cook until the cheese melts.

Drain the onion; assemble the burgers on the toasted buns adding onions and lettuce.
